The modern fondu recipe follows melting cheese and wine. It is a serving in a pot with an open flame beneath it. It dates to the late 1800s, with roots in the French Rhône-Alpes region near the Geneva border.
In 1930, the Swiss Cheese Union declared it the country’s national dish.
